Abstract:
1. A process for the production of meat products, especielly cooked ham, which are cooked in a compact form in a netting by smoking and/or heating, characterized in that said meat product in raw or pre-processed form is covered with a casing of edible collagen layre and an overlying netting of any mesh form desired and is subsequently subjected to a final cooking process.
