Abstract:

PURPOSE: To improve the tastes of roasted Japanese chestnut, and to preserve the chestnut for long time, by coating the roasted chestnut after cooling and washing with water.

CONSTITUTION: Roasted Japanese chestnut is immersed in water or sprinkled with water to effect the cooling and washing at the same time. The washed chestnut is coated with one or more coating materials selected from a natural resin such as shellac, rosin, etc., a synthetic resin such as a vinyl polymer, melamin resin, etc., and waxes such as carnauba wax, microcrystalline wax, etc.
