Abstract:
PROBLEM TO BE SOLVED: To provide a gelatinized starch product having novel and superior performance as compared to conventional gelatinized starch.SOLUTION: There is provided a gelatinized starch having a ratio of apparent viscosity of the gelatinized starch at a concentration of 8 mg/ml and 25°C in UDMSO (9 volume of DMSO and 1 volume of 6M urea) to the apparent viscosity of corresponding original non-gelatinized starch of 1.00 to 1.18 at 1 s-1, a standardized storage elastic modulus of aqueous dispersion of 6 wt.% of the starch at 30°C G' (c/c*) of 15 to 30 Pa. Further the gelatinized starch is used for food, especially food for infants, modified powdered milk for infants, feed, pharmaceuticals, cosmetics and personal care products.
