Abstract:
To provide restructured milk having no problem in flavor, uniformity and separation of a final product through using gelatin.
A method for producing a dairy product containing gelatin, defatted milk and cream comprises mixing formulating components followed by heating and filling the product in a packaging container. In more detail, the method comprises melting gelatin in warmed water, adding preferably liquid defatted concentrate to the mixture containing water and gelatin in a stirring condition, slowly stirring the mixture containing water, gelatin and defatted concentrate to swell the product, and adding and mixing cream to/with the mixture containing water, gelatin and defatted concentrate.
