Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing thin plate-like baked confectionery, capable of producing baked confectionery having a crispy and light texture like sandwich baking, by using an oven generally used, and using a foamable oil and fat material generally used without requiring special production equipment such as a sandwich baking machine, forming a porous inner layer structure like sandwich baking without the need of addition of an expansion agent to dough, performing dough making by a relatively simple method like an all-in-mix method, hardly causing change in a specific gravity of dough owing to that the foamed dough has excellent stability, and obtaining baked confectionery with a crispy and light texture even when baking after the lapse of time after making dough.SOLUTION: A method for producing thin plate-like baked confectionery having a porous inner layer structure like sandwich baking includes baking using an oven, foam dough which contains grain flour, eggs and saccharide, and at least one kind selected from an oil-in-water emulsified product, and powdery oil and fat.SELECTED DRAWING: None
