Abstract:
To provide a method for recovering momordicin, capable of efficiently recovering the momordicin from a cucurbitaceous plant, without requiring a huge amount of labor, nor time, nor cost.
This method for recovering the momordicin comprises extracting the cucurbitaceous plant as a raw material with ethanol to form a cucurbitaceous plant extract solution, mixing the extract solution with ether, leaving the mixed solution as it is to form an ether layer, and mixing the ether layer with acetone to deposit the solid momordicin.
