To provide a method for retrieving, by a simple operation, an L-biphenylalanine salt formed by enzymohydrolysis of a biphenylalanine ester to utilize the thus retrieved salt.
The method for retrieving an L-biphenylalanine compound salt comprises the following process: a biphenylalanine ester compound of formula (1) (wherein, R1 is an alkyl or the like; and R2 is an amino-protecting group) is hydrolyzed using a protease derived from a microorganism belonging to the genus Bacillus in a mixed solvent of an organic solvent and water while adjusting to pH6-13, and an aqueous phase containing the resultant L-biphenylalanine compound salt and an organic layer containing an unreacted D-biphenylalanine ester compound are separated from each other. An inorganic salt and an organic solvent are added to the aqueous layer and the objective L-biphenylalanine compound salt in the aqueous layer is isolated.
