Abstract:
To provide a method for sterilizing or preserving a food, which has high safety and exhibits excellent antimicrobial action.
The method for sterilizing or preserving a food includes adding one or more kinds selected from potassium chloride, magnesium chloride, and catechins to a food so as to have 0.5-30 mass% of potassium chloride and/or magnesium chloride and 0.001-0.5 mass% of catechins.
