Abstract:

PURPOSE: To obtain a food having improved shelf stability, nutritive value, etc., inexpensively by adding a food raw material such as animal, fish and shellfish, vegetable, fruit, etc., in a hot oil, dehydrating it under reduced pressure while keeping the temperature constant, taking it out and deoiling it.

CONSTITUTION: A food raw material such as animal, fish and shellfish, vegetable, fruit, etc., is added to a hot oil kept at a constant temperature and the food raw material is dehydrated with the hot oil as a heating medium under reduced pressure while keeping the temperature of the hot oil constant and stirring the hot oil. Then, the food raw material is taken out from the hot oil, deoiled, this food raw material is added to another food or processed into slice or paste. Consequently, the food raw material can be completely dehydrated at a low temperature in a short time. Therefore, the food raw material can be dehydrated without causing outflow and change in quality of carbohydrate, water-soluble protein, fat, vitamin, etc., in the food raw material.
