Abstract:
To provide a mixed powder for a Japanese snack capable of shortening a baking time.SOLUTION: The mixed powder for the Japanese snack contains wheat flour including heat-treated wheat flour, rice flour and/or starch, a thickener, and preferably an expansion agent. Furthermore, the mixed powder preferably contains 10-50 mass% of heat-treated wheat flour within the wheat flour, 5-20 pts.mass of rice flour and/or starch and 0.05-0.5 pts.mass of alginate ester and/or alginate as the thickener, relative to 100 pts.mass of wheat flour.SELECTED DRAWING: None
