Abstract:
To provide a production technology of wheat-processed product, which acquires recombinant Ero1 from gene information and applies gluten formation brought about by reproduction of PDI by Ero1 and bakery improvement action.
The modifier for wheat-processed product includes recombinant Endoplasmic Reticulum Oxidoreductase 1 (rEro1) produced from a transformed cell transformed with a polynucleotide composed of a base sequence represented by sequence number 1, protein disulfide isomerase (PDI) and flavine adenine dinucleotide (FAD) as main components.
