To obtain a novel compound that has a sweet and fruity smell reminding of fresh and ripe fruit with excellent retention.
This is 3 hydroxy-βionylidene methane represented by the formula. This compound is obtained by extracting a natural fruit with an organic solvent and by steamdistillation and the resultant essential oil is purified by distillation, column chromatography and other purification processes. This compound can be singly used as a flavor or flavor modifier, but, when it is added to a fruit base perfume mainly comprising benzaldehyde, preferably in an amount of 0.01-1.0 wt.%, the sweet smell of fresh and ripe fruit is enhanced and the addition to perfume composition to be used in cosmetic as perfumed water in an amount of 0.01-20.0 wt.% affords a durable and characteristic fragrance.
