Abstract:
PROBLEM TO BE SOLVED: To provide an oil-based food (and a compound bakery food containing an oil-based food) in which the occurrence of bloom and grain is suppressed, and also the gloss is good.SOLUTION: Provided is an oil-based food in which L2M and LM2 are contained in the oil/fat and the mass ratio (L2M/LM2) of the content of L2M to the content of LM2 is 0.05 to 4.5. Here, L, M, L2M and LM2 mean the following. L: saturated fatty acid having 16 to 24 carbon atoms; M: fatty acid having 6 to 10 carbon atoms; L2M: triacylglycerol having 2 molecules of L and 1 molecule of M bound to 1 molecule of glycerol; LM2: triacylglycerol having 1 molecule of L and 2 molecules of M bound to 1 molecule of glycerol.SELECTED DRAWING: None
