Abstract:
To provide an oil and fat composition for bakery which can achieve a bakery product which provides good workability during its production and melts well in a mouth and has a soft and chewy texture and which can keep the texture.SOLUTION: An oil and fat composition for bakery contains 1.5 to 55 mass% of xanthan gum and a glycolytic enzyme and has a water content of 5 mass% or less. In the oil and fat composition for bakery, a content of starch is preferably 2 mass% or less and a content of the glycolytic enzyme is preferably 0.01 to 0.7 mass%.SELECTED DRAWING: None
