Abstract:

PURPOSE: To provide a kimuchi(Korean pickled vegetable)-like food, its vinegar pickle, wasabi pickle, soy pickle, miso pickle, boiled product in soy and powdery food, using a Chinese edible wild plant, KOSAI, as a main material.

CONSTITUTION: A Chinese edible wild plant, KOSAI, as a main material is mixed with various seasonings, spices, stabilizers, tasteful materials, miso, soy, wasabi, mustard, etc., and subsequently cooked by a vacuum-cocking method at low temperature to provide the Kimuchi (Korean pickled vegetable)-like food. Various improved Kimuchi-like foods having good crispy tooth touches favorite for Japanese, such as vinegar pickles mustard pickles soy pickles, miso pickles, boiled foods in soy, and powdery foods are obtained.
