Abstract:
PROBLEM TO BE SOLVED: To provide a plastic oil and fat composition good in sustainability of sweetness by milk fat from middle to last and body feeling or richness by the milk fat, a spread using the same and a manufacturing method of a burned product.SOLUTION: The plastic oil and fat composition contains milk fat, total content of lauric acid bound to 2-position of triglyceride and myristic acid bound to a 2-position of triglyceride is 5 to 22 mass% based on mass of whole 2-position constituting aliphatic acid of oil and fat and content of saturated aliphatic acid is 40 to 65 mass% based on mass of whole constituent aliphatic acid.SELECTED DRAWING: None
