PROBLEM TO BE SOLVED: To provide a novel compound adding excellent crystallization promotion property to oil and fat and an application thereof.SOLUTION: The polymer compound is expressed by a specific structure consisting of a [phosphorous acid-glycerol-hydroxy fatty acid-fatty acid] structural unit where a polymer unit consisting of hydroxy fatty acid by ester polymerizing glycerol and fatty acid is further polymerized with phosphoric acid via an ester bond with average polymerization degree of the structural unit of 0 to 100 and molecular weight of 3,000 to 100,000.SELECTED DRAWING: None
