Abstract:
PROBLEM TO BE SOLVED: To provide a powder emulsifier composition capable of obtaining a food product which is improved in dispersibility and excellent in eating feeling and to provide a production method capable of easily obtaining the emulsifier composition.SOLUTION: An emulsifier composition comprises: (A) saccharides; (B) a glycerin fatty acid monoester; and (C) lecithin in which the content of a phospholipid is 90 mass% or more and the total content of phosphatidic acid and a hydrogen additive thereof is 5 to 30 mass%. The emulsifier composition is obtained by spray-drying an aqueous dispersion containing the components (A) to (C).
