Abstract:

PURPOSE: To prepare a fish-paste product having improved shelf stability, elasticity, and good taste with its smell of fish removed, by blending a raw material for fish paste with an extracted solution of Chlorella, followed by molding and coagulation.

CONSTITUTION: In preparing a fish-paste product, e.g., kamaboco (boiled fish paste), chikuwa, hanpen (both kinds of fish paste), etc., not less than 0.1wt%, preferably about 0.3wt% extracted solution of Chlorella is added to the raw material of the fish-paste product in any process before molding and coagulation.
