PURPOSE: To prepare a low-molecular peptide composition useful as a food ingredient, by subjecting a protein raw material to enzymatic hydrolysis with acidic proteases.
CONSTITUTION: ≥1wt%, preferably 2W5wt% based on a protein raw material of acidic protease and pectin derived from Aspergillus saitoi and are simultaneously added to aqueous dispersion containing 5W20w/v% protein raw material derived from any origin adjusted to 1W4pH, the protein raw material is subjected to enzymatic hydrolysis at 25W60°C for 8W72hr with suppressing the formation of free amino acid, the enzymes are deactivated under heating, to prepare a low-molecular peptide composition having ≤20wt% free amino acid and peptide with ≥700 molecular weight, consisting essentially of dipeptide and tripeptide, having ≤700, preferably ≤500 average molecular weight.
