Abstract:

PURPOSE: To prepare packed gelatinous food having excellent preservability, by putting an emulsion or plastic material prepared from starch into a plastic bag or tube, gelling the emulsion, etc. in the plastic bag, etc., and sealing the bag, etc. at an arbitrary stage of the preparation.

CONSTITUTION: An emulsion or a plastic material made of starch, such as nonglutinous rice or rice flour, is put in a flexible plastic bag or tube, pressed to a thick plate, and gelatinized by heating. The plastic bag, etc. is sealed after being fed with the emulsion, etc. e.g. before or after the gelation.
