Abstract:

PURPOSE: To provide a process for the preparation of steamed cake without getting a product having sticky surface, cracked surface or half-cooked core part in the steaming of a dough for steamed cake by placing the dough in a steamer and introducing steam into the steamer.
CONSTITUTION: The steaming of a cake or thawing of a steamed and frozen cake is carried out by properly introducing dry steam having reduced pressure, wet steam having reduced pressure, their mixture or, in certain cases, high- pressure dry steam into a steamer.
