Abstract:

PURPOSE: To obtain a food having the crispiness of potato chips, by slicing carrot, potato, etc. to thin slices of proper thickness, heating and freezing the slices, and frying in frozen state.

CONSTITUTION: Raw potato is sliced to a thickness of about 2mm, heated at 90W 100°C with steam or hot water, and frozen at ≤-10°C. The frozen potato is fried in oil without thawing to obtain the objective processed food.
