Title:
PRODUCTION OF ACYLATED PEPTIDE
Document Type and Number:
Japanese Patent JPS60137299
Kind Code:
A
Abstract:

PURPOSE: Proteolysis of a protein is followed by deaeration of the peptide produced and acylation to give high-concentration and high-purity acylated peptide of low irriatating smell and good color.

CONSTITUTION: A protein such as collagen or casein is hydrolyzed with a protease, preferably a neutral protease originating from filamentous fungi, to a level of 200W1,000mol.wt. then the product is deaerated, preferably at 30W100°C under reduced pressure to obtain an aqueous peptide of 50W90wt% concentration. Then, the peptide aqueous solution is acylated with a fatty acid halide of 8W22 carbon atoms in the presence of 5W30% of a monohydric or dihydric alcohol such as ethanol or propylene glycol based on the acylated peptide to be obtained.
