Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing an adhesive composition for a raw meat piece having a sufficient adhesive force on processing of a food in spite of heating or non-heating without requiring a gelling agent such as a protein-system substance or a polysaccharides-system substance and to provide an economical adhered piece of raw meat capable of preparing and preserving the composition as a water dispersion and controllable an adhesion work time.
SOLUTION: This adhesive composition for a raw meat piece is composed of 100 pts.wt. of at least one kind of alkali agent selected from baked calcium, an alkaline earth metal oxide, an alkaline earth metal hydroxide and sodium hydroxide and 40-100 pts.wt. of one or more than two kinds of a neutral salt and a basic salt. The adhesive composition for a raw meat piece in an amount of 0.5-2.5 pts.wt. is dispersed into 1-10 pts.wt. of water and mixed to 100 pts.wt. of a raw meat piece for subjecting to adhesive molding.
