Abstract:

PURPOSE: To obtain fructose even from a glucose solution having low conentration, by culturing a microbial strain belonging to Bifidobacterium genus in a nutrient medium free from xylose and xylan, disintegrating the microbial cells and contacting the resultant enzyme liquid to glucose.

CONSTITUTION: A microbial strain belonging to Bifidobacterium genus (e.g. Bifidobacterium longum, Bifidobacterium, adrescentes, Bifidobacterium infantes, Bifidobacterium bifidam, Bifidobacterium breve, Bifidobacterium liberolum, etc.) is cultured in a nutrient medium containing glucose, peptone, yeast extract, magnesium ion, marble, etc., at 37°C by standing culture or anaerobic culture and the obtained microbial cells are disintegrated to obtain an enzyme liquid. A proper amount of the enzyme liquid having glucose isomerase activity is added with glucose and made to react at 7pH for several hours to obtain fructose.
