Abstract:

PURPOSE: To obtain the titled compound from a precursor of a highly unsaturated fatty acid with microorganism using enzymatic reaction, by using microbial cell (or treated cell) of a microbial strain belonging to Mortierella genus and capable of synthesizing highly unsaturated fatty acid.

CONSTITUTION: A precursor (e.g. acetic acid) of a highly unsaturated fatty acid is converted to the objective compound in the presence of microbial cells (or treated cells) of a microbial strain belonging to Mortierella genus and capable of producing a highly unsaturated fatty acid [e.g. Mortierella elongata SAM 0219 (FERM BP-1239)] usually in an aqueous medium. The reaction is preferably carried out at pH 5W8 and 10W30°C for 10W48hr.
