Abstract:
To provide a production method for a buckwheat noodle that has a strong scent a consumer likes even when a lot of bind powder is used to prevent a cutting of the noodle during boiling the buckwheat noodle.
The buckwheat noodle is produced by using buckwheat tea instead of conventionally used cooling water or hot water in the water-adding and kneading process.
