Abstract:

PURPOSE: To provide production process for speedily and economically producing a salted food of high nutrition and high quality with the feeling of tissues being cut well by teeth through the use of various vegetables.
CONSTITUTION: The new method for producing a salt food produces the salted food of high quality in a short time by repeating the processes of pressurizing and decompressing vegetables mixed and 'sho-rui'(food fermented and salted with koji such as soy sauce). The salted food producing method comprises a) the step of washing and drying the vegetables, b) the step of mixing the dried vegetables obtained by the process with 'sho-rui' and c) the step of repeating pressurizing the vegetables mixed with 'sho-rui' as the result of the step at 3 to 10 air pressure to keep 2 to 6 hours and decompressing to atmosphere for one to three hours, for two to eight days for aging.
