Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing a powdery seasoning material capable of realizing a low oxygen state at a low cost, setting the oxygen concentration variably and producing it in an optimum oxygen concentration for each of cooking objective materials, and its device.
SOLUTION: This method for producing a powdery seasoning material is provided by installing a food-introducing chamber 13 and a food-discharging chamber 14 at the introducing side and the discharging side of a food-loading conveyer 11 of a superheated steam device main body 12 respectively and also slopes at the introducing side and discharging side of the food-loading conveyer 11, and further controlling the exhausting amounts of air at an inlet side exhausting device 21 in the device main body and outlet side exhausting device 22 in the device main body so as to set the amount of air in the super-heated steam device 12 variably.
