Abstract:

PURPOSE: To produce processed starch having excellent properties and suitable as a raw material for processed food, in high efficiency, by continuously extruding starch having a specific water-content with a twin-screw extruder under a specific condition, crystallizing the extrudate under cooling, and drying and pulverizing the crystallized product.

CONSTITUTION: Starch having a water-content of 20W60%, preferably 25W35% (e.g. potato, tapioca, wheat, rice, etc.) is continuously extruded with a twin-screw extruder at 70W150°C, preferably 80W120°C under a pressure of ≤100kg/cm2, preferably ≤60kg/cm2. The extrudate is cooled to ≤20°C to effect the crystallization of a part of the gelatinized starch, dried at ≤80°C and pulverized usually to about 60 mesh. Processed starch having low gelatinization initiation temperature and giving gelatinized material having low viscosity can be produced by this process. It is not necessary to control the water-content by the addition of water and a raw material having broad range of water-content can be treated by this process.
