Abstract:

PURPOSE: To produce 'sake' and food capable of accelerating proliferation of yeast in MOROMI (unrefined sake), improving filtering property and smell of the products.
CONSTITUTION: In a production of 'sake' and food having a process for liquefying raw material grains, the liquefying process is one in which raw material grains are liquefied without essentially being crushed in a machine or an apparatus having low shearing force to produce 'sake' and food. The raw material grains can be heat treated. SEISHU ('sake'), SHOCHU (Japanese spirit distilled from sweet potatoes, rice, etc.) and MIRIN (a sweet sake) are examples of 'sake'. AMAZAKE (a sweet drink made from fermented rice) and rice gruel are examples of food. A machine or an apparatus in which ≥50% raw material grains are remaining can be used.
