Abstract:

PURPOSE: To produce good quality kiwi wine free from bitter taste.

CONSTITUTION: The objective method for producing wine using a kiwi fruit produced by supplying sugar to a stock solution obtained by crushing and filtering kiwi fruit and fermenting and aging the mixture as a raw material is characterized by supplying sugar based on the concentration of quinic acid much contained in the kiwi fruit to the stock solution. Thereby, the ratio of sugar to an acid of wine after production is improved and the produced wine is free from bitter taste by quinic acid.
