Abstract:

To obtain the Chinese noodles satisfactorily cookable even with a high-power microwave oven, easily cookable for a short time to satisfactory palate feeling, and also capable keeping firm texture after boiled, to provide a method for producing such noodles, and to provide a method for cooling such noodles.

The Chinese noodles are obtained by mildly and slowly freezing noodle ribbons each 0.8-1.3 mm in thickness prepared by adding 0.1-5 wt.% of animal/vegetable protein to wheat flour. The 2nd objective method for producing such raw Chinese noodles, and the other objective method for cooling such raw Chinese noodles are provided, respectively.
