To provide a retort sterilizing method for packaged products in the form of steam pasteurization, which, despite an improved energy consumption efficiency, is in no risk of causing food quality even if the content of a packaged product is a protein-containing food and is no risk of splotching a package of the packaged product to be shipped.
A hot water of 50-80°C is introduced from a hot water storage tank into the retort pot to capacity, thereby deaerating inside of the retort pot, and simultaneously recovering into the hot water storage tank the primary cooling water used for primary cooling of the inside of the retort pot after the steam pasteurization filling and recovering into a primary cooling water storage tank the secondary cooling water used for secondary cooling of the inside of the retort pot. The hot water used in the deaerating process is drained.
