To obtain a saponin-containing extract having enhancing effect on immune strength, fatigue recovery effect, improving effect on blood flow, etc., useful as a health food, cosmetic, medicine, etc., by stirring Panax notoginseng in a solvent such as water, ethanol, etc., separating an extracted solution and concentrating the solution.

Panax notoginseng in an amount of 1 pt.wt. is mixed with 1-20 pts.wt. of a solvent containing one or more of water, ethanol, acetone and hexane, and stirred and an extracted solution is separated from a solid content. The extracted solution is concentrated by evaporating the solvent from the extracted solution until the volume of the extracted solution reaches ≤10 vol.% based on the amount of the solvent added, the solid content is separated and a supernatant liquid is concentrated by solvent evaporation until a saponin content reaches ≥5 wt.% to give the objective extract. The extraction temperature is preferably 30-50°C and stirring is carried out for 2-24 hours. The concentration of the solvent can be performed by evaporating the solvent by an evaporator, an extraction pot with a condenser, etc.
