Abstract:

To provide a sauce taste improver imparting favorable taste even to sauces having reduced content of oil-and-fat; and to provide a method for producing sauces reduced in the content of oil-and-fat and improved in taste, using the taste improver.

The sauce taste improver for imparting favorable taste even to the sauces having reduced content of oil-and-fat is produced by adding dry yeast, obtained by treating yeast collected through a beer-brewing process with alkaline aqueous solution and drying the yeast, when producing white sauce, curry sauce, or the like. The sauces having improved and excellent taste is provided by adding the sauce taste improver when producing the sauces.
