Abstract:
PURPOSE: To stabilize a starch hydrolase, especially α-amylase and pullulase against a chelating agent and a surfactant and to prevent the inactivation of the enzyme in a detergent by adding and mixing a sugar alcohol to the enzyme.
CONSTITUTION: A sugar alcohol is added to a starch hydrolase in an amount of getting a system containing 0.01-10wt.% of the sugar alcohol. The sugar alcohol is preferably maltitol, malttriitol or malt-tetraitol.
