Abstract:

PURPOSE: To obtain a solid or semisolid instant soup composition having an enhanced rich taste and a milk flavor in spite of low contents of fats and oils in a liquid state in drinking and eating thereof.

CONSTITUTION: This solid or semisolid instant soup composition comprises common salt and at least one seasoning ingredient selected from a meat extract, a vegetable extract and a protein hydrolyzate. Furthermore, 4-50wt.% oil droplets capable of providing ≤1μm particle diameter when dissolved or dispersed in water in an amount of 7.5 times based on the composition is contained in the instant soup composition.
