Abstract:
PURPOSE: To obtain a food having a good feeling to the teeth like herring roe, by treating raw roe of smelt with an aqueous solution of calcium lactate.
CONSTITUTION: Raw roe of smelt, etc. is washed with water, soaked in an aqueous solution of calcium lactate, e.g., an aqueous solution containing 5W7wt% salt and 0.1W0.3wt% calcium lactate, and stirred for about 30min to 1hr.
