Abstract:

PURPOSE: To obtain a W/O-type emulsion covered composition suited to the covering, etc., of a frozen desert product by introducing a specific water phase into a fat phase so as to reduce a calorie content and so as to improve texture property and flavor property.
CONSTITUTION: Water, preservatives, aroma and sweetening agents are mixed in low acid pH. The water phase is separately prepared and the fat phase and emulsifier-deca-glycerine-deca fatty acid ester are blended separately at a temperature where fat is liquid. While blending completely, the water phase is introduced into the fat phase to obtain the desired W/O-type emulsion covered composition including 40 to 55 wt.% water phase and 2 to 4% emulsifier group.
