To provide: Undaria Pinnatifida dry substance; a method for producing the Undaria Pinnatifida dry substance; and noodle and bread each containing the Undaria Pinnatifida dry substance to be improved in palate feeling.
The Undaria Pinnatifida dry substance (1) is obtained by converting Undaria Pinnatifida into sol in a pH 7-9 solution containing the Undaria Pinnatifida, and thereafter drying the sol-state Undaria Pinnatifida. The method for producing the Undaria Pinnatifida dry substance (2) comprises a process of converting Undaria Pinnatifida into sol in a pH 7-9 solution containing the Undaria Pinnatifida to obtain a sol-state Undaria Pinnatifida-containing solution, and a process of drying the obtained sol-state Undaria Pinnatifida-containing solution to produce the dry substance. The noodle or the bread (3) contains the Undaria Pinnatifida dry substance (1).
