To provide a highly efficient vacuum drying device for giving drying treatment to dried objects which are starch food residues such as white rice with no adverse effects of a crushing device, when provided separately.

The vacuum drying device for heating, agitating and drying the dried objects 3 in a vacuum condition comprises a drying pan 1 to be internally heated in a vacuum condition and an agitator 2 provided in the drying pan 1 for agitating the dried objects 3. A crusher 5 is provided in the drying pan 1 for crushing the dried objects 3 charged from a charge port 4 into the drying pan 1 before agitating and drying them with the agitator 2. A crusher heating means is provided for heating the crusher 5 itself when crushing the dried objects 3 with the crusher 5. When crushed, the dried objects 3 are heated for primary drying and agitated with the agitator 2 for secondary drying.
