Abstract:
PROBLEM TO BE SOLVED: To provide a shoe puff having a sufficient volume even without using sodium caseinate, namely, a shoe puff being large-sized and satisfactory in a flavor texture.SOLUTION: A water-in-oil type emulsificated material for a shoe is blended with: separation protein with a gel strength of 10 to 60 g cm by 1 to 10 wt.%; and a water-soluble soybean polysaccharide by 0.2 to 5 wt.%. As the separation protein, vegetable separation protein, particularly, separation soybean protein and separation mung bean protein are preferable. By using this water-in-oil type emulsified material, a shoe base material is prepared by the conventional method, and is fired at 220 to 260°C with oven burning down at least for 8 min to produce a shoe puff having a high volume and satisfactory in a flavor texture.SELECTED DRAWING: None
