Abstract:

PURPOSE: To obtain a water-sol. antioxidant excellent in safety, antioxidant activity, solubility in water, and liphophilicity and suitable for stabilizing food and beverage contg. unsatd. oil or fat by selecting a water-sol. antioxidant contg. a specific compd. as the effective component.

CONSTITUTION: A water-sol. antioxidant contg. 2,3-dihydroxypropyl ferulate (a compd. of the formula) or/and its salt as the effective component is selected. This antioxidant is incorporated in an amt. of 0.01-10.0wt.% into a compsn. (e.g. a toilet lotion).
