Abstract:
To provide a jelly-in-jelly excellent in appearance and flavor, in which a component contained in an included jelly piece is suppressed to elute by a heating treatment, and a manufacturing method therefor.SOLUTION: There is provided a jelly-in-jelly in which one or more kind of jelly piece is dotted or located in a substrate jelly, the substrate jelly contains welan gum and/or cellulose. There is provided a manufacturing method of the jelly-in-jelly, including a process for containing the welan gum and/or the cellulose in the substrate jelly, a process for filling one or more kind of jelly piece and the substrate jelly in a container, and a process for heat treating the container. It is preferable that the content of the welan gum is 0.01 to 3 mass% based on total amount of the substrate jelly, and the content of the cellulose is 0.005 to 2 mass% based on total amount of the substrate jelly.SELECTED DRAWING: Figure 1
