Abstract:
To provide a roux having beef tallow flavor even with a low beef tallow content.SOLUTION: The roux comprises beef tallow, a pasty peach, and coconut milk. The content of the beef tallow is 10 mass% or less based on the total mass of the roux. The content of the pasty peach is 0.06-0.65 mass% in terms of the solid content based on the total mass of the roux, and/or the content of the coconut milk is 0.3-4.0 mass% in terms of the solid content based on the total mass of the roux.SELECTED DRAWING: None
