Abstract:
Provided are bundled uncooked noodles useful as starting noodles for instant noodles which can be produced by using an existing production line as such, as far as possible, without adding any special agent and can be reshaped into straight noodles with a little wave when reconstituted in hot water. A noodle dough is passed between a pair of cutting rolls to form a plurality of noodle strings. Then, the noodle strings are layered on a conveyor in a curled state so that the individual noodle strings are not parallel to the adjacent noodle strings and roughly helically arranged. Thus, the noodle strings are overlapped together to give almost flat noodle bundles. On the conveyor, the individual noodle strings constituting the uncooked noodles are curled and repeatedly form rings. These rings are aligned while successively displacing along the direction opposite to the conveying direction of the conveyor. The orbit drawn by a noodle string does not synchronize the orbit drawn by the adjacent noodle string. The noodle strings are overlapped in a crossed manner so that the center of each noodle string ring is displaced from the center of the adjacent noodle string ring. In this state, the noodle strings can be reshaped into almost linear straight noodles by reconstituting in hot water even in the case where the noodle strings are cooked as such.
