Abstract:
A fatty mass composition, a fatty mass mixture, a meat analog, and a method for producing a fatty mass composition, including oil-and-fat-containing granules and an edible ion-crosslinked polymer that is crosslinked using cations, and, in at least one cross-section that is perpendicular to the longitudinal direction, the ratio b/a being 2.00 or greater, where "b" is the length of a line on which the length between two points is maximized, and "a" is the length of a line having the greatest length from among lines that are perpendicular to the line on which the length between two points is maximized.
