Abstract:
The present invention relates to a food manufacturing apparatus and method for injecting additives into food. The food manufacturing apparatus comprises: a first vacuum chamber having an accommodation space therein; a second vacuum chamber positioned inside the first vacuum chamber and having an accommodation space; a cover for closing the first vacuum chamber and the second vacuum chamber; a first vacuum pump connected to the first vacuum chamber to suck air inside the first vacuum chamber; a second vacuum pump connected to the second vacuum chamber to suck air inside the second vacuum chamber; a connection valve for connecting and blocking between the first vacuum chamber and the second vacuum chamber; an additive storage tank for storing additives to be injected into food; a supply nozzle connected to the additive storage tank to supply the additives into the second vacuum chamber; an injection valve for connecting and blocking between the additive storage tank and the supply nozzle; and a control unit for controlling the operation of the first and second vacuum pumps, wherein: the food is accommodated in the second vacuum chamber; the first vacuum pump sucks the air in the first and second vacuum chambers until a first vacuum pressure is reached in the state in which the connection valve is opened, and when the first vacuum pressure is reached, the connection valve is closed; the second pump sucks the air in the second vacuum chamber until a second vacuum pressure lower than the first vacuum pressure is reached; and the additives are supplied to the second vacuum chamber through the injection valve when the pressure inside the second vacuum chamber is between the first vacuum pressure and the second vacuum pressure. According to this configuration, a food manufacturing apparatus and method for injecting additives into food which can enhance sugar content or allow a user to ingest other functional ingredients by penetrating active ingredients into foods such as fruits, and can prevent discharge of the impregnated active ingredients even when the external temperature rises, may be provided.
